Komt de eerst volgende leverdag niet goed uit? Dan kunt u een berichtje plaatsen bij uw bestelling of u kunt een mailtje sturen naar info@boerrobbie.nl met de gewenste leverdag. Let wel dat dit altijd een dinsdag, donderdag of zaterdag moet zijn. 

 

Veel winkels bezorgen thuis via de reguliere post. Dat gaat doorgaans goed, maar helaas ook regelmatig fout. Wij vinden het niet prettig dat u zich zorgen maakt of het eten wel goed blijft gedurende het transport.

Daarom verzenden wij met een gespecialiseerde koerier genaamd Vers & Fijn. Zij hebben zich toegelegd op het verzenden van eten en hebben daarvoor speciaal ingerichte koelwagens. Zij brengen het eten bij u thuis, terwijl dit ten alle tijden op -18C gekoeld blijft.

Zij doen ook hun uiterste best om het altijd af te leveren. Daarom vragen we uw telefoonnummer bij de bestelling. Mocht u er onverhoopt niet zijn dan zullen ze samen met u de beste oplossing bespreken. De bezorgers van Vers & Fijn snappen dat een pakket met mooi vlees en vis niet zomaar als een pot verf van bol.com in de gang kan worden gezet.

Zo komt uw eten altijd perfect aan.

U zult misschien direct aan biologisch vlees denken wanneer u onze website bekeken heeft. Al ons vlees komt van vrije dieren, die goed leven, gezond zijn en goed eten. Toch is ons vlees niet biologisch. 

Vrij vlees en biologisch gaan eigenlijk niet goed samen. Wanneer u uw vlees bio wilt of mag noemen, dan zitten daar strikte controles op. Bji biovlees dient al het voer van biologische bronnen te komen. Wanneer een dier wild rondloopt dan is dat niet te controleren. Daarom mag wild of vrij vlees nooit een bio keurmerk hebben. Ziet u dat wel? Dan zou ik mezelf afvragen hoe dat mogelijk is. 

Daarnaast garandeert biologisch vlees niet dat uw dieren geheel vrij leven. Zo mag een rund van 200kg, 240 dagen per jaar in een stal van 2.5m2 staan. Ik weeg zelf de helft en ik vind 2.5m2 toch best krap. De exacte criteria van SKAL Bio kunt u hier zelf nalezen. 

Bij Boer Robbie is uw rund of ossenvlees niet afgemest met graan of maïs, altijd in de weide, gevoed met gras, kuilvoer en hooi. Bij bio wordt dit niet gegarandeerd. Zo mag biovlees 3 maanden worden afgemest, 240 dagen binnen staan en voer zoals maïs en granen eten.

Als u bij onze rund en ossenvlees kijkt dan zal het u misschien opgevallen zijn dat naast de Vechtdalse Hooglanders uit Overijssel, al het vlees uit Nieuw-Zeeland komt. In de tijd waarin duurzaamheid een belangrijk maatschappelijk thema is, lijkt het niet verstandig om basisbehoeften aan de andere kant van de wereld naar Nederland te verschepen. 

Deze vraag is mij veel gesteld en ik heb besloten om het eens uit te zoeken. Allereerst ben ik begonnen met de verkoop van vlees uit Nieuw-Zeeland, omdat het simpelweg de beste kwaliteit gras-gevoerde ossen en rundvlees ter wereld is. Ik heb nog geen vlees in Nederland of zelfs Argentinië en Uruguay gevonden dat eraan kan tippen. Maar daarover later meer. 

Wat kost het nu eigenlijk aan co2 om vlees vanuit Nieuw-Zeeland over te brengen? 

Het vlees komt per container via de zee naar Nederland. De co2 uitstoot is via deze site makkelijk na te lezen. Om 18,000kg vlees naar Nederland te verschepen kost 2,500kg aan co2. Toen vroeg ik me af of dat nu veel of weinig is. 18,000kg komt ongeveer neer op 90,000 maaltijden. Als je per week 4-5x vlees eet dan kun je hier bijna 400 mensen per jaar mee voeden. 

Maar hoeveel is 2,500kg co2 dan? Een gemiddelde auto die 20,000km per jaar rijdt, stoot al snel 4,000kg aan co2 per jaar uit. Dus in dat opzicht valt het reuze mee. Echter gaat het nog een stapje verder.

De runderen en ossen in Nieuw-Zeeland worden niet bijgevoerd met maïs of tarwe. Ze krijgen geen krachtvoer of supplementen van visolie uit peru. Dit gebeurt hier doorgaans wel. Om tarwe en maïs te verbouwen worden ook veel fossiele brandstoffen gebruikt. Van pesticiden tot brandstof. Daarnaast is het verschepen van vismeel uit peru naar Nederland als supplement natuurlijk net zo vervuilend. 

Natuurlijk zijn runderen zoals uit het Vechtdal ideaal. Deze lopen buiten, voorzien zichzelf, eten geen maïs of tarwe, geen supplementen. Dit zal in principe beter zijn. Maar helaas heb je hier heel veel ruimte voor nodig. En die is er in Nederland simpelweg niet. Ten tweede is het Nederlandse landschap te vlak. Daardoor wordt het gras in de winter vertrapt. Het water kan namelijk niet goed wegstromen en u zult zien dat alle runderen in de winter op stal staan. 

Dus het meeste vlees uit Nederland is niet per definitie beter dan uit Nieuw-Zeeland qua duurzaamheid en duurzaam vee houden in Nederland is slechts beperkt mogelijk. 

 

Bij ons rund, ossen, lams en hertenvlees zit er echt geen antibiotica in. De meeste dieren zijn zo gezond dat antibiotica helemaal niet wordt gebruikt. Maar net als bij u en ik als we onverhoopt toch ziek worden dan zal een dierenarts natuurlijk antibiotica voorschrijven, omdat we niet willen dat dieren lijden. 

 

Wanneer dit gebeurt geldt er wel een wachttijd van 6 weken voordat het dier geslacht mag worden. Dit is genoeg tijd om de antibiotica weer uit het systeem te krijgen. 

Bij ons wild vlees en onze vis wordt er sowieso geen antibiotica gebruikt natuurlijk. Dit is ook een belangrijke reden dat al onze vis wild gevangen is. Want bij kweekvis is antibiotica gebruik problematisch.

En hoe zit het dan met de kip?

Kip is eigenlijk het meest gecompliceerd van al het vlees. Bij kip wordt standaard veel antibiotica gebruikt. En dat is ook logisch als u nagaat hoe standaard kippen worden gehouden. Doorgaans in grote schuren van 30,000 of zelfs meer dieren met beperkte ruimte. Als er één ziek wordt, dan worden ze allemaal ziek. Daarom wordt er antibiotica in het eten van alle dieren gedaan. Meestal zelfs preventief.

Daarnaast worden er in Nederland veel 'toevoegingen' gebruikt die in feite gewoon antibiotica zijn. Zoals cocciodistatica. Dit is voor de NVWA geen antibiotica, maar een toevoeging. Echter is het in feite wel een antibiotica. Er zijn maar weinig kippen in Nederland waar geen coccidiostatica standaard in het voer zit. Wanneer dit wel niet zo is, wordt dat ook uitgebreid vermeld zoals bij Tante Door bijvoorbeeld. Het is eigenlijk zo uniek in Nederland dat Tante Door in 2016 het eerste bedrijf was in Nederland dat is overgestapt op voer vrij van coccidiostatica.

U had zich misschien al afgevraagd waarom al onze kip uit Frankrijk komt. Daarom. Bij Label Rouge Loué, Nature & Respect en Fermiers d'Ancenis wordt geen coccidiostatica gebruikt en geen antibiotica. Hoewel dit bij Tante Door ook zo is, leven Tante Door kippen hun hele leven binnen in een schuur. Dat past niet wat ik bij Boer Robbie wil. Daar moeten alle dieren ook echt zijn en veel buiten leven. En dit heb ik tot nu toe alleen in Frankrijk kunnen vinden. 

In Nederland is het zeer lastig om kippen veel buiten te houden zonder antibiotica gebruik. Waarom het in Frankrijk wel kan heeft een groot deel te maken met het klimaat en ook zoals Tante Door aangeeft, de betere voeding. Daarnaast is beperkt het keurmerk Label Rouge het aantal kippen per schuur tot 4,000 en niet 30,000. Het resulteert natuurlijk wel in dat Label Rouge kip prijzig is en dat wordt door de Nederlandse consument ook nog weinig gewaardeerd. 

In Nederland is er nog weinig vraag naar echte kwaliteit kip. Kippenvlees wordt hier door velen gewoon als kip gezien en er wordt geen onderscheid gemaakt op smaak. In Frankrijk is er een grote vraag naar echte smaakvolle kip en daar betaalt de consument er ook graag voor. Om smaakvolle kip te krijgen, moeten ze ook beter leven. Dus dat past precies bij de filosofie van Boer Robbie. Ik hoop echte smaakvolle kwaliteits kip in Nederland ook aan populariteit wint en dat kip weer als luxe product wordt gezien in plaats van een massa product.

Je hebt kweekzalm en je hebt wilde zalm. Vrijwel alle zalm die vandaag wordt verkocht in Nederland komt van de kweek. Waarom verkopen wij dan toch alleen wilde zalm?

Bij BoerRobbie staat uw gezondheid en de gezondheid van de dieren voorop. Helaas is het succes van de zalm bij de consument een probleem. Kweekzalm wordt in zeer grote aantallen gekweekt en daar komen enkele problemen bij kijken. 

Zo kun je bij kweekzalm niet garanderen dat het vrij is van antibiotica of pcbs. De omega 3 in kweekzalm neemt de laatste jaren af. En er zijn daarnaast veel zorgen over de invloed van het massale kweken op de natuur.

Daarnaast vind ik persoonlijk wilde zalm veel lekkerder dan kweek.

Aha! Vaak worden de termen door elkaar gebruikt, maar er zit wel degelijk een verschil in. Allereerst is ossenvlees een stuk duurder dan rundvlees. Dus vaak wordt iets ten onrechte als ossenvlees aangemerkt, om het maar voor meer te kunnen verkopen. Het prijs verschil kan makkelijk meer dan 50% zijn. 

Maar vanwaar dit verschil in prijs? Rundvlees is eigenlijk van een vrouwelijke koe of mannelijke stier. Ossenvlees is vlees dat komt van een gecastreerd rund. Dat zorgt ervoor dat het dier minder testosteron aanmaakt en

 

Het is u misschien al opgevallen dat er vaak gras-gevoerd achter rundvlees staat. Wat is dat en waarom doet het er toe?

Wellicht is het verrassend om te horen dat runderen(vlees koeien) niet alleen gras eten. We beelden ons altijd in de runderen in de weide staan, maar dat is maar de helft van het plaatje. 

De meeste runderen staan het merendeel van de tijd op stal waar ze weinig bewegen en veel bijgevoerd krijgen. Dit bijvoeren kan bestaan uit verschillende dingen zoals maïs, bonen, granen tot supplementen, visolie en zelfs m&m's. 

Van dit eten worden ze vaak lekker dik en dat is goed voor de boer. Er wordt per slot van rekening per kilogram betaald. 

Echter horen runderen inderdaad alleen gras te eten. En omdat het tegenwoordig vaker niet dan wel het geval is, zetten we het erbij. Onze runderen leven 365 dagen per jaar buiten in de wei, staan nooit op stal, krijgen geen onnatuurlijk voedsel. 

Dit komt niet alleen tot uiting in de smaak en kwaliteit van het vlees, maar ook in de samenstelling van het vet van het vlees. Gras-gevoerd vlees is iets voedzamer dan graan of maïs gevoerd vlees. Het heeft bijvoorbeeld meer CLA en vitamine A.

Dat kan wel, maar dat is niet aan te raden voor het beste resultaat. Vlees en vis moeten eerst rustig op temperatuur komen. Daarom raden we aan om het eerst 24u in de koelkast te laten ontdooien en vervolgens 1 of 2 uur voor het bereiden uit de koelkast te halen en op kamer temperatuur laten komen.

Op deze manier komt het vlees en vis het best tot zijn recht.

Met de nieuwe invriestechnieken is het eigenlijk niet van vers te onderscheiden. Probeer het maar eens uit met een blind test.

Dat ligt eraan. Hoe koud is uw koelkast? Is het rund, kip of vis? 

Bij een temperatuur van maximaal 4C kunt u vis en kip nog 1 dag bewaren nadat het volledig ontdooid is. Rund kan nog 3 dagen blijven liggen. Vooral als het in het vacuum verpakt blijft. 

Soms is haast geboden, maar dan is het vlees nog bevroren! U kunt het dan direct van bevroren bereiden, maar dat leidt niet tot het beste resultaat. 

Wij raden aan om vlees en vis 24u van te voren in de koelkast van maximaal 4C te leggen om zo rustig te ontdooien. Op deze manier blijft de textuur in tact. 

Vervolgens kunt u 1 tot 2 u van tevoren het uit de koelkast halen en op kamertemperatuur laten komen. Verwijder dan wel de vacuum verpakking.

Kan ik het ook onder de kraan laten ontdooien? Ja, dat kan en dat gaat snel met lauw water. Maar dat komt de smaak niet ten goede. Laat het op deze manier wel in vacuum zitten en bereid het direct.
